When I first tried the baklavas Dr. Dickerson brought in, my first reaction was at how sweet these desserts were. Then, when I reached the center, which was topped with pistachios, the nutty flavor and texture balanced out the overwhelming sweetness I tasted on the first bite. I&#8217;ve come to notice that many Middle Eastern pastries contain pistachios, perhaps it&#8217;s a popular product in the area.
